Niyama Unveils the World's First Underwater Nikkei Dining Experience

Niyama Private Islands Maldives introduces a groundbreaking dining experience with the debut of its innovative Nikkei tasting menu at the renowned underwater restaurant, Subsix. Combining the finesse of Japanese cuisine with the boldness of Peruvian flavors, this one-of-a-kind offering is set to captivate food enthusiasts in the Maldives.

Perched six meters beneath the surface of the Indian Ocean, Subsix has long been known for its extraordinary location and immersive dining encounters. With panoramic views of vibrant coral reefs, playful anemone and butterfly fish, and the occasional glimpse of a reef shark, dining here is nothing short of magical, providing an unforgettable experience. 

Now, Subsix takes it a step further by launching a unique Nikkei tasting menu that is just as remarkable as its setting. Fusing traditional Japanese techniques with the bold flavors of Peru, this five-course menu highlights the rich bounty of the surrounding waters, incorporating sustainably sourced ingredients and presenting them in an inventive and modern style. Standout dishes include scallop ceviche, a delicate blend of citrus and sea salt; wahoo tartare, locally sourced and paired with creamy avocado and a touch of heat; and the silky cod, perfectly complemented by the crispness of asparagus. Guests can elevate the experience further by pairing their meal with a curated selection of premium sake or wines, handpicked by the restaurant's Head Sommelier, Mayank Sharma. 

The culinary mastery behind the menu comes from Executive Chef Thierry Vergnault, whose extensive training at the prestigious Four Seasons Hotel George V in Paris laid the foundation for his global culinary career. Chef Vergnault’s unique vision for Subsix emphasizes the importance of fresh, high-quality ingredients sourced directly from the Indian Ocean. 

“As the surroundings of Subsix are unlike any other, the menu must reflect the same level of excellence,” says Chef Vergnault. “Each dish is designed to tantalize all five senses, offering an exciting and sensory dining experience.” 
In addition to Subsix, Chef Vergnault oversees a total of nine dining venues at Niyama, including the newly relaunched Nest, offering Asian cuisine in the treetops; the vibrant Tribal, which explores South American and African flavors; and Indian Ocean Edge, located amidst the water itself.
