A Global Oyster Journey
The experience takes diners across oceans and coasts without leaving the city. From the plump, creamy French Gillardeau, often hailed as the “Rolls-Royce of oysters,” to the elegant Black Pearl and the subtly sweet Fine de Claire Verte, each French oyster reflects the artistry of its origin. Guests are then transported to the Southern Hemisphere, savoring New Zealand’s Mona oysters with their delicate umami and sweetness. The journey continues with two Chinese varieties: Dalian Zhangzi Island oysters, known for their generous, succulent meat, and Shandong Rushan oysters, tender and sweet, capturing the abundance of the Yellow Sea.
Culinary Craftsmanship: Four Distinct Preparations
At Yotsuba, each oyster is celebrated through four distinct preparations. Sashimi highlights pure freshness, while teppanyaki adds warmth and gentle smokiness. Agemono delivers a crisp exterior with tender interiors, and the oyster soup offers comforting depth, allowing diners to explore a spectrum of flavors in every bite.
The Oyster Blind Box: A Playful Discovery
For a more playful experience, the Oyster Blind Box adds an element of discovery—a curated trio of two imported oysters and one domestic oyster, paired with small bites, encouraging guests to explore the character of each oyster in a refined, ritual-inspired setting.
