With "omakase" translating to "I'll leave it up to you," this dining style represents the pinnacle of culinary mastery, where the finest delicacies are meticulously selected by the masters of the craft. Kanesaka-san, accompanied by a team of eight talented chefs, sommeliers, and hosts, several of whom have joined from his esteemed portfolio of restaurants, is dedicated to achieving perfection in every dish.

Discerning diners seeking an intimate, immersive, and contemporary omakase experience will delight in Sushi Kanesaka's creations and culinary mastery. The restaurant presents up to 20 meticulously prepared courses, showcasing the best seasonal ingredients. Core elements like wasabi and rice, with Chef Kanesaka introducing his own rice blend from Japan's Yamagata Prefecture, are sourced from trusted suppliers. The seafood, sourced from the UK and Europe, undergoes the Japanese ikejime method and is carefully selected to ensure the highest quality and adherence to the seasonal availability.

Complementing the omakase experience, Sushi Kanesaka offers a curated selection of sake pairings, wines, beers, and Japanese whiskies. Sake takes center stage, with Sushi Kanesaka's intriguing and explorative selection guiding diners through the rich history of this ancient spirit. Hand-cut glasses by Horiguchi Kiriko add to the visual allure, while the whiskies, including Hibiki, Yamazaki, and Hakushu, embody the dedication to tradition and craftsmanship passed down through generations.

The bespoke design of the restaurant provides the perfect setting for a traditional omakase experience. Guests can choose to sit at the nine-person counter or the adjacent four-person counter within a private dining room. Each space is presided over by a sushi Shokunin, offering a personalized and captivating dining experience, the Sushi Kanesaka way. Playing a pivotal role in Japanese hospitality, Nanami-san, an okami, ensures that the 13-seat restaurant delivers an unparalleled guest experience.

Every aspect of the interior and dining experience has been thoughtfully curated to capture the spirit of traditional Tokyo sushi restaurants. The interiors, designed by Itai-san, a master of Japanese restaurants, evoke harmony and tranquility. The intimate chef's counter, carved from a single piece of Japanese Kiso Hinoki cedar wood, adds to the authenticity and warmth of the space.
