A debut in the British capital
Daniel Rose, who has restaurants in Paris and NYC, is opening Le Perroquet inside The St. Regis London. Rose will open Le Perroquet inside London's brand new branch of the St Regis hotel in Mayfair, which is taking over from the now-closed Westbury hotel. Le Perroquet is expected to open in autumn 2026 with the launch of the London St Regis.
French cooking at its heart
The all-day brasserie will showcase his signature take on French cooking, with Executive Chef Robert Aikens, who worked with Rose in NYC, leading the kitchen. The menu will flow throughout the day, from breakfast to dinner, and work for every kind of meal. A versatile concept designed to capture the all-day energy of a Parisian brasserie.
When hotels become dining destinations
The opening illustrates how luxury hotels increasingly rely on celebrated Chefs to anchor their identity and draw both guests and locals. By pairing the St. Regis name with a chef of Rose's stature, the property positions its restaurant as a destination in its own right, in a city where hotel dining has become a fiercely competitive arena.
