Le Royal Mansour Marrakech recrute un (e) Adjoint Chef Exécutif.
Mission principale :
Seconder le Chef Exécutif sur l’ensemble des cuisines dans le respect de la vision et de la stratégie d’excellence du Royal Mansour. Il est l’ambassadeur de l’excellence culinaire du Royal Mansour.
Activités et responsabilités :
Participe à la stratégie des concepts culinaire de l’hôtel ;
Participe à la conception des menus et recettes en coordination avec sa hiérarchie;
Responsable de la satisfaction des hôtes et de l’évolution des scores LQA ;
Veille à la satisfaction des collaborateurs par rapport à la cuisine centrale ;
Responsable de la qualité des produits et de leur transformation ;
Fédère et mobilise ses collaborateurs autour de la stratégie et des projets (du Département) initiés par Le Directeur du Département ;
Coordonne, oriente, dirige, anime et évalue son équipe et identifie les besoins de formations ;
Participe à l’élaboration du budget de son Département pour validation de sa hiérarchie;
Participe à l’élaboration du budget d’investissement de son département pour validation de sa hiérarchie ;
Se tient informé des tendances et des points de vente à la mode
Responsable du coût de marchandises et veille à leur optimisation et participe au contrôle des autres points de ventes ;
Responsable de l’exactitude des inventaires et vérifie que celui soit accompagner par des membres de son équipe.
BAC+2 en Cuisine ; ou équivalence ;
10 années d'expérience, dont au minimum 3 ans dans une fonction équivalente ;
Expèrience managériale requise. Expérience gestion de cuisine multi sites
Maîtrise du français et bon niveau d'anglais, la maîtrise d'une autre langue est un plus.
The Royal Mansour Marrakech offers its guests a wonderful welcome in the heart of Marrakech. It was born from the desire to create a spectacular hotel.
