Rotunda Bar at Lounge at Four Seasons Hotel London at Ten Trinity Square celebrates Queen’s Jubilee with superbloom afternoon tea

This June, Rotunda Bar and Lounge at Four Seasons Hotel London at Ten Trinity Square will celebrate the Queen’s Platinum Jubilee with the launch of the all-new Superbloom Afternoon Tea. A floral spin on its signature Crown Jewels Tea, the Superbloom Afternoon Tea will draw inspiration from the flora and fauna in bloom over summer and Rotunda Bar and Lounge’s neighbours, the Tower of London, who will this June mark the jubilee with a vibrant, colourful installation of wildflowers in the Tower’s moat.

As is tradition, the menu will feature a number of classic finger sandwiches including the coronation chicken, created for Queen Elizabeth’s coronation banquet in 1953, with creme fraiche, mango and raisins, alongside the quintessentially British minted cucumber with espelette pepper cream cheese, and smoked salmon and a dill and caper mayonnaise. For a touch of luxury, diners will be able to enjoy a soft egg mayonnaise brioche with truffle oil and wholegrain mustard or a beef pastrami with sauerkraut.

Executive Pastry Chef Sylvain Goujon has drawn inspiration from the sea of flowers in the Tower’s moat and seasonal British flavours to create a selection of pastries reminiscent of a flowerbed in bloom, including The Chamomile, a delicious honey biscuit centre with chamomile-infused apricot confit, topped with honeycomb chantilly; The Damas Rose, an alpaco chocolate tart with rose-infused ganache and voatsiperifery pepper cream; and The Yellow Peony, a vibrant turmeric mousse infused with Madagascan vanilla, topped with a candied lemon flower. The centrepiece of the tea will be The Crown, inspired by the iconic St. Edward’s Crown worn by Queen Elizabeth during her coronation, a base of soft yuzu sponge and green shiso cream topped with a British strawberry confit and an intricately crafted yuzu chocolate crown.

No British afternoon tea would be complete without freshly baked homemade scones and jam, and the Superbloom tea will be no different with two new flavours of jam created especially for the tea. The floral apricot-lavender and strawberry-jasmine jams will add the perfect sweetness to the scones, and be served alongside generous helpings of Devonshire clotted cream.

Head Bartender Ayoub Radi has created a Wild Garden cocktail to pair perfectly with the tea: a refreshing tipple of gin, jasmine tea, St-Germain and lavander. For those wanting to stick to a classic British brew, a number of teas will be available including some of the world’s finest such as darjeeling from Makaibari, Earl Grey from Satemwa Estate in the Highlands of Malawi, or home-grown herbal teas such as Cornish peppermint from the Tregothan Estate in Cornwall.

We can’t wait to celebrate with guests over jubilee weekend and throughout the summer.”

The Superbloom Afternoon Tea will launch on the 1st June 1 and be available until September 18, 2022. Bookings are now available online.
