Four Seasons Hotel London at Park Lane announces one month residency and experimental tasting menu with Chef Carlo Scotto

Four Seasons Hotel London at Park Lane welcomes Carlo Scotto for a one-month residency. The culinary partnership comes ahead of the spring opening of his new restaurant Amethyst. Previously Head Chef of Xier, Carlo earned widespread rave critic reviews for his innovative tasting menus and, from April 1 to 30, 2022, guests can be amongst the first to experience a flavour of what is to come.

The month-long residency in the Hotel’s Amaranto Restaurant will showcase Carlo’s creative cuisine and flair with a seven-course tasting menu, alongside a classic or prestige wine pairing by the Hotel’s Bar Manager Ivan Arena. Expect a gastronomic journey of unusual flavour combinations, razor-sharp techniques and theatrical dishes from one of London’s hottest chefs.

The tasting menu features the same intense flavours and experimental techniques that have become Carlo’s hallmark. Marrying Japanese and Scandinavian influences with carefully sourced, ethically grown British produce, breath-taking dishes designed to satisfy all the senses include: Caviar Tartelette, scallops, galangal and matsutake; Foie Gras, rose petal salmon, yuzu and Piermont hazelnuts; Black Cod, with caramelised miso, naganegi dashi and daikon; and “The Sweet Pleasure” surprise dessert. All courses on the tasting menu are also available as dishes on the à la carte menu.

For the culinary curious and special occasions, diners can enjoy a bespoke 10-course surprise tasting menu in the beautiful private dining room or semi-private Captain’s Table. Curated individually for each booking, guests will have the opportunity to interact with the charismatic Carlo.
